San Antonio-based Deep River Specialty Foods brought home two International Flavor Awards this year, including one for its Watermelon Grilling Sauce. While not a typical marinade for meat, co-founder Cheri White says it’s actually quite versatile and can be used for everything from wings to ribs or even as part of a vinaigrette for salad. Here, she shares their go-to recipe for chicken wings with watermelon sauce.

Juice of one large lime

½ cup Deep River Specialty Foods Watermelon Grilling Sauce

-Mix the soy sauce, fish sauce and lime juice in a bowl. Pour the liquid over the wings, either in a sealed plastic bag or container, and let marinate them in the refrigerator. Leaving them overnight is fine.

-When you’re ready to cook, preheat the oven to 375 F.

-Line a large baking sheet with foil and place a wire rack on top of the baking sheet.

-Remove the wings from the marinade and dry them with a paper towel.

-Place the wings in a bowl and cover with watermelon grilling sauce, tossing to ensure each is covered.

-Arrange wings on the wire rack and roast in the oven for about an hour (or until they are crispy and golden).
